There are lots of other options for all ages in Vegas. Must sees are the M & M factory, Gameworks (great place for kids and adults), and the Coca Cola factory.
There is also the Fashion Show Mall to walk around. And, the Deuce will take you south of the Strip to the new Charleston Square Mall or the Belks Las Vegas Outlet Mall south of McCarron Airport.
Also it is a lot of fun to just tour the hotels along the strip - but make sure to wear comfortable shoes! Caesar's Palace is a HUGE hotel and has a very cool shopping mall inside with the ceiling even patterned to look like you are outside (blue sky and fluffy clouds). Be careful going in here though as it is easy to get lost. You might also want to check out The Grand Canal Shoppes at the Venetian and while there don't forget Madame Tussauds.
Also there are several hotels along the strip for the thrill seekers out there - the Stratosphere with 3 rides at the top of the Tower, one that shoots you up in the air, one that works like a Teeter Totter and dangles you over the edge and one that hangs you over the edge and then spins you around at 65 MPH. Also the New York, NY has an awesome roller coaster as well as the Circus Circus and the Sahara.
There are also plenty of shows for both adults and kids- Cirque du Soleil, Blue Man Group, several magic shows... and don't forget Excalibur's Tournament of Kings dinner shows. One of the only comedy shows in Las Vegas that kids are allowed to attend is 'Larry G Jones' Superstar Voices in Concert' which offers song parodies and singing imitations of Las Vegas' top headliners and shows. If you're into art, both the Venetian and the Bellagio have excellent galleries.
Also, Las Vegas has Wet'n'Wild Water park (The park on the Strip next to the Sahara has been torn down and is being relocated away from the Strip) which is a lot of fun and a relief from the heat.
Anyone that loves to drive cars should check out "The Drive" near the Sahara. To Get there, go to the Sahara Hotel and Casino and take the monorail bridge across the road. You can't miss the signs or the cars. In essence, the Drive, is a promotional gimmick created by General Motors. But what is cool about this promotion is you get to drive the cars on course for their capability. For example, you can drive an H2 thru an off road course or you can floor it in a corvette. For tourists and locals you must take a breathalyzer, sign the waiver, and pay the man ($10 for tourists and $8 with NV Id). One of the best values in town for car enthusiasts!
For classic car lovers, there's the Classic Car Museum at the Imperial Palace (almost all the cars are for sale) and the classic car exhibit inside the Caesars Palace Forum Shops near the Fall of Atlantis Animatron Show.
