There are hundreds of places to eat in Las Vegas - nearly every hotel offers a great breakfast buffet. Some of those buffets that stand out are the buffets at Excalibur and Harrah's. Both have a great selection of food, a price that is relatively inexpensive, and the restaurants are clean - always important!
Paris's breakfast buffet, the Spice Market at Planet Hollywood and the Tintoretto at the Venitian are also good. Just beware of the lines that can form for breakfast at Paris and PH.
If you're looking for a great place for sit down service, Sherwood Forest at Excalibur offers delicious breakfast choices at terrific prices while America at NY NY offers typical "American" breakfast fare at reasonable prices. The restaurant boasts a hanging map of the United States that you must see to appreciate. Whether Downtown or on the Strip, almost every casino hotel restaurant will have "slot card" specials available at a reduction from the price on the menu if you remember to show your slot club card to the cashier when you pay.
And there is also a Denny's on the strip near Harrahs if that suits your tastes, and an IHOP between Sahara and the Stratosphere.
